| ya, chicken n corn is so quick and easy!
Here's a really fast easy recipe that anyone can make;)
500 ml/2cups/1 pint (one carton) of off the shelf liquid chicken stock
2 cans of creamed corn (or one creamed corn and one corn kernels if you like it chunckyer)
300gm (or big handful) of finely chopped chicken of your choice, thigh meat, breast meat whatever you like best! I personally like to use leftover roast chicken, it's just tastier after its been roasted but just as quick and easy to use raw chicken.
and if you like your chicken and corn soup thick instead of brothy 1 tbl spoon of cornflour mixed with a little water to make it runny.
Stick your chicken stock and corn into a pot and bring to the boil, add your chicken and let simmer for a few mins, the chicken should cook in next to no time cause it's finely chopped.
if you want it thick add the cornflour and water mixture to simmering soup and let it simmer for another 2 mins
and voila!
chicken and corn soup as good as your local chinese take out;)
enjoy!
oh, you can scale this recipe up or down to your needs, add more or less chicken or corn to your tastes, just bring the liquid to the boil and make sure you simmer raw chicken for a few mins:)
i think the ammounts i've given above will give you about 6-8 decent sized bowls.
